OVERVIEW
The Bartender is primarily responsible for the overall operation and supervision of the assigned bar. This position focuses on providing an immaculate service to Residents and Guests. The Bartender not only prepares cocktails but also creates new ones to be part of the bar menu. He/She supervises and coaches junior bar staff in their duties as required.
RESPONSIBILITIES
Beverage Operations
Create Signature cocktails for the bar list, special functions and events by following our philosophy of incorporating regional and seasonal ingredients.; Support the Beverage Manager in research and development of the cocktail program.; Responsible for the overall operation and supervision in the assigned bar.; Ensure a welcoming ambiance in the bar lounges and public rooms by following the outlets’ specific check lists.; Prepare mise-en-place, restock and support the service of assigned stations and for all other events and functions.; Prepare and present cocktails following the cocktail manual.; Supervise and guide junior bar staff and assist them with their duties as required.; Conduct monthly physical stock take for assigned area; assist to deplete stock of slow-moving items.; Complete depletions and transfers accurately.; Work on minimizing waste and breakage and maintaining proper handling procedures.; Responsible for requisitioning all food, beverage, and consumable items for assigned area.; Follow key control procedures by locking and securing assigned areas during non-operating hours.; Responsible for the correct charging and handling of all checks and sales transactions.; Provide revenue reports to Beverage Management, Controller and Night Auditor.;
Resident and Guest Services
Exceed Resident and Guest expectations in every aspect of personalized service in accordance to Leading Quality Assurance (LQA) standards and participate in regular training.; Stay informed with regards to beverage, cocktail and bar trends.; Ensure Resident and Guest preferred beverages are available at any given time.;
General
Ensure ICANs and AVOs are created in IssuTrax to report deficiencies, work orders are submitted and followed through.; Acknowledge and communicate Resident and Guest preferences to Management.; Ensure validity of an eTIPS certificate and adhere to the responsible service, sale and consumption of alcohol.; Actively support the goals and objectives for the department and adhere to all new policies and company initiatives as assigned.; Maintain accurate Time & Attendance Records (TAR) for each time period worked.; Actively participate in Company training as and when required.; Ensure all areas are maintained in accordance with Public Health, Safety Management System (SMS) and Safety & Environmental regulations; adhering to Company Policies and procedures as appropriate to the position;; Execute safety duties as per the Emergency Plan and Station Bill.; Assist with Ship tours, Zodiac landings, Marina days, Expeditions and other activities when required.;
QUALIFICATIONS, EDUCATION & EXPERIENCE
Able to read, write and speak fluently in English.; Hotel School Diploma.; Certification in Bartending from a well-recognized institution required.; Minimum of 3 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort.; One additional language is preferred.; Good computer skills to include Word, Excel and Outlook preferred.; Working knowledge of point of sales systems and inventory management systems required.; Sound experience of cocktail mixing and service in a luxury setting required.; Ability to create innovative cocktails.;
WORKING CONDITIONS
Ability to work seven (7) days a week for an extended period, including day or night, weekends, and holidays.; While performing the essential functions of this job, all Crew are required to stand, walk long distances on the Ship and may include the repetitive motion of bending, climbing, going up and down the stairs and lifting up to 23 kilograms.; All Team members must be physically able to participate in emergency life-saving procedures and drills. All vessel positions require full use and range of arms and legs as well as full visual, verbal and hearing abilities to receive and give instructions in the event of an emergency including the lowering of lifeboats.; Work within different temperature changes - indoors to outdoors.; Ability to pass STCW safety course.; Able to live harmoniously in close quarters.;
